  • 8 oz goat cheese
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh sage leaves, chopped
  • Salt and black pepper to taste
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded

Instructions:

  1. Prepare the Pasta Shells:
    • Cook the jumbo pasta shells according to the package instructions. Make sure they are cooked al dente. Drain and set aside.
  2. Prepare the Pumpkin Puree:
    • Preheat your oven to 375°F (190°C).
    • Cut the pumpkin in half, remove the seeds and stringy pulp.
    • Place the pumpkin halves on a baking sheet, cut side down. Roast for about 45-50 minutes or until the flesh is tender and easily scoopable.
    • Scoop out the flesh and puree it in a blender or food processor until smooth. Set aside.
  3. Prepare the Filling:
    • In a large bowl, combine the pumpkin puree, goat cheese, ground nutmeg, grated Parmesan, chopped sage, salt, and black pepper. Mix until well combined.
  4. Stuff the Pasta Shells:
    • Using a spoon, carefully stuff each pasta shell with the pumpkin and goat cheese mixture. Place the filled shells in a baking dish.
  5. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  6. Add Marinara Sauce:
    • Pour the marinara sauce over the stuffed shells, ensuring they are well-covered.
  7. Top with Mozzarella:
    • Sprinkle the shredded mozzarella cheese evenly over the top.
  8. Bake to Perfection:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Broil for a Golden Finish (optional):
    • If you prefer a golden crust, remove the foil and broil for an additional 2-3 minutes, watching closely to prevent burning.
  10. Serve and Enjoy:
    • Carefully remove from the oven and let it cool slightly before serving. Garnish with additional fresh sage leaves if desired.
  11. Savor the Culinary Masterpiece:
    • Enjoy the harmonious blend of pumpkin and goat cheese in these delectable stuffed shells. Each bite is a burst of fall flavors!

Note: This dish pairs wonderfully with a crisp salad or garlic bread. Adjust the seasonings to suit your taste.
