Savory Pumpkin Risotto

  • 1 cup Arborio rice
  • 1 small cooking pumpkin (about 2 pounds)
  • 4 cups chicken or vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh sage leaves (optional, for garnish)


  1. Prepare the Pumpkin Puree:
    • Preheat your oven to 375°F (190°C).
    • Cut the pumpkin in half, remove the seeds and stringy pulp.
    • Place the pumpkin halves on a baking sheet, cut side down. Roast for about 45-50 minutes or until the flesh is tender and easily scoopable.
    • Scoop out the flesh and puree it in a blender or food processor until smooth. Set aside.
  2. Warm the Broth:
    • In a saucepan, warm the chicken or vegetable broth over low heat. Keep it simmering gently.
  3. Sauté Onions and Garlic:
    • In a large, deep skillet or saucepan, heat the olive oil and butter over medium heat. Add the chopped onions and garlic. Sauté until they are soft and translucent, about 5 minutes.
  4. Toast the Rice:
    • Add the Arborio rice to the skillet. Stir well to coat the rice with the oil and butter. Cook for about 2-3 minutes, or until the edges of the rice become translucent.
  5. Deglaze with Wine (optional):
    • If using wine, pour it into the skillet. Stir continuously until the wine is mostly absorbed.
  6. Add Pumpkin Puree:
    • Spoon in the prepared pumpkin puree. Stir it into the rice mixture until well combined.
  7. Begin Adding Broth:
    • Begin adding the warm broth, one ladle at a time, stirring constantly. Allow each addition to be mostly absorbed before adding the next.
  8. Continue Cooking:
    • Keep adding broth and stirring for about 18-20 minutes, or until the rice is creamy and cooked to your desired level of doneness.
  9. Finish with Parmesan:
    • Stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
  10. Serve Hot:
    • Spoon the pumpkin risotto into serving bowls. If desired, garnish with fresh sage leaves.
  11. Enjoy!

Note: Feel free to adjust the consistency by adding more or less broth depending on your preference. For a vegetarian version, use vegetable broth instead of chicken broth.
