Ingredients:
- 1 cup Arborio rice
- 1 small cooking pumpkin (about 2 pounds)
- 4 cups chicken or vegetable broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh sage leaves (optional, for garnish)
Instructions:
- Prepare the Pumpkin Puree:
- Preheat your oven to 375°F (190°C).
- Cut the pumpkin in half, remove the seeds and stringy pulp.
- Place the pumpkin halves on a baking sheet, cut side down. Roast for about 45-50 minutes or until the flesh is tender and easily scoopable.
- Scoop out the flesh and puree it in a blender or food processor until smooth. Set aside.
- Warm the Broth:
- In a saucepan, warm the chicken or vegetable broth over low heat. Keep it simmering gently.
- Sauté Onions and Garlic:
- In a large, deep skillet or saucepan, heat the olive oil and butter over medium heat. Add the chopped onions and garlic. Sauté until they are soft and translucent, about 5 minutes.
- Toast the Rice:
- Add the Arborio rice to the skillet. Stir well to coat the rice with the oil and butter. Cook for about 2-3 minutes, or until the edges of the rice become translucent.
- Deglaze with Wine (optional):
- If using wine, pour it into the skillet. Stir continuously until the wine is mostly absorbed.
- Add Pumpkin Puree:
- Spoon in the prepared pumpkin puree. Stir it into the rice mixture until well combined.
- Begin Adding Broth:
- Begin adding the warm broth, one ladle at a time, stirring constantly. Allow each addition to be mostly absorbed before adding the next.
- Continue Cooking:
- Keep adding broth and stirring for about 18-20 minutes, or until the rice is creamy and cooked to your desired level of doneness.
- Finish with Parmesan:
- Stir in the grated Parmesan cheese, and season with salt and black pepper to taste.
- Serve Hot:
- Spoon the pumpkin risotto into serving bowls. If desired, garnish with fresh sage leaves.
